Another great meatless Monday idea is a delicious vegetarian pizza!! We love pizza and since we found out how easy and way more delicous it is to make our own, we never order delivery. If you want to make your own crust see my previous post on homemade bread, the recipe is the same. However many nights are crazy and buying a ready made dough can taste just as good. I buy mine from a local Italian specialty store, Tony Caputo’s. If you don’t live in Salt Lake, try to find the perfect little Italian market in you city and I’ll bet they’ll have a delicious pizza dough to buy. Whole Foods also sells a really good one.
Preheat your oven to 500 degrees and put in pizza stone or pizza pan, you want this to get really hot.
Roll out your pizza dough on a floured surface or pull with your hands, it doesn’t have to be perfect and in Italy they never are, that’s part of their charm.
1/4 to 1/2 good quality marinara sauce
2 tbs olive oil
1 cup cherry tomatoes cut in half
3 garlic cloves minced
1 cup shredded Mozzarella or more if you like
1/4 cup basil (pick the leaves off the steams place one leaf on top of the other and then roll up like a little straw, now take a knife and slice into the straw horizontally this will make beautiful little basil ribbons.
When your oven is done preheating take out your pan or stone, next move the dough to the pan and quickly add you toppings. First drizzle the olive oil onto the dough and gently brush it on evenly. Next add your sauce, go sparingly and add more if you like by spooning it on and spreading it around. Now put on the freshly minced garlic spreading it around as evenly as possible, this will give your pizza a great garlic flavor. Next add your cheese and then tomatoes. Save the basil to put on just before serving as it will wilt if you bake it or put it on when the pizza first comes out. Now bake the pizza for about 8 min. Let it cool for at least 5, cut it up and then add the basil. Serve with a salad of spinach and arugula and you have a delicious meatless meal!
